Raw apple pie you ask? Yes raw. AKA no baking, minimal time required.
Found this recipe and followed it exactly (except I used less apples) at The Real Meal because we had a surplus of apples and needed to use them in some recipes. It's literally the simplest recipe ever. Very few ingredients. & to quote Eric "best apple pie ever."
Ingredients:
Crust-
1 cup almonds
1 cup pitted dates
salt
Sauce-
1/2 cup pitted dates
1 peeled orange
water
Insides-
3 apples thinly sliced
ground cinnamon
Food process almonds until they are well ground. Sprinkle some of the ground almonds in the pie pan to cover the bottom
lightly. Add dates and salt to food processor until the mixture sticks together. Press crust firmly to bottom and sides of
pie pan. Food process dates, orange, and water for sauce and set aside. Use enough water to keep the mixture running.
Combine apple slices, cinnamon, and sauce in a bag and toss to combine. Add the apples on top of the pie crust.

The longer you let it sit in the fridge the better it tastes.
