Our meal planning kind of went by the wayside this week... One day we didn't feel like cooking so we just had leftovers. This left us a day off with meals so we decided to improvise and boy am I glad we did. We ended up with these delicious stir fry stuffed peppers.
Ingredients:
bell peppers
rice
onion
garlic
green beans
broccoli
celery
teriyaki sauce
Cook rice according to instructions on package. Preheat oven to 350 degrees. Chop up ingredients for stir fry (onion, garlic, green beans, broccoli, celery). Stir fry chopped up ingredients until slightly soft but not too done and add teriyaki sauce. Cook a little longer with sauce and rice and then remove from heat. Cut tops off peppers and remove insides. Place in oven for 15 minutes to cook a little before the peppers are stuffed. Stuff peppers with stir fry mixture and then continue to bake for another 25 minutes.
