Tonight we made a killer dinner. Literally, it was absolutely delicious, not to brag or anything. I had cut a recipe out of the paper for grilled lemon chicken with lemon feta green beans a few weeks ago and we decided to give it a try. We also made mashed potatoes. So this blog post will not contain just one recipe but three!!
Grilled Lemon Chicken
boneless chicken breast
lemon juice
lime juice
olive oil
garlic
salt & pepper
1. Marinate boneless chicken breast in olive oil with lemon juice, lime juice, chopped garlic, and salt & pepper for 30 minutes.
2. Once marinated, grill until fully cooked.
Lemon Feta Green Beans
green beans
lemon juice
lime juice
red onion
feta cheese
1/2 tbs sugar
drizzle of olive oil
1. Combine chopped red onion with 1 lemon's worth lemon juice and 1/2 tbs sugar.
2. Boil green beans until fully cooked.
3. Once green beans are fully cooked allow to cool in cold ice water.
4. Combine green beans with onion/juice dressing.
5. Add in drizzle of olive oil and feta.
6. Mix up everything.
Greek Feta Mashed Potatoes
red skin potatoes
Greek yogurt
butter
feta cheese
salt & pepper
1. Boil potatoes until fully cooked.
2. Drain water and mash potatoes.
3. Add Greek yogurt, butter, feta cheese, and salt & pepper to taste.
4. Mix/mash everything together.
I highly recommend this meal. It was definitely a NAILED-IT, and it was super easy to make.
