We all know veggies are good for you, and a lot of us probably don't get the amount that we need. I mean seriously, veggies are unbelievably good for you, and a lot of us tend to not eat them with our meals. So how do you make veggies your bitch you ask? Read more to see.
Eric and I have been attempting to eat healthier. Not that we ever really eat bad, but trying to be better. Less meat, more veggies. You get the point.
Eric actually bought me this really interesting book to read about cancer and it's correlation to eating animal products (meat, cheese, etc.) I'm pretty excited to read it, maybe because I am a science nerd, but I am pretty sure I know a few ladies that might be interested in reading it once I am done. It's called The China Study.
But back to the point, VEGGIES!
We took a Pinterest inspired way to make broccoli and liked it so much that we've been adding different veggies in. It's delicious, super easy, and doesn't require much effort.
In the picture below we chose to do: cherry tomatos, broccoli, green pepper, red onion, and carrots. All you have to do is pre-heat the oven to 450F (make it hot in that bitch), then coat your cut up veggies in olive oil with some salt and pepper to taste. Put them veggies in the oven and cook them long and good, otherwise known as around 45 minutes. It really all depends on how much you have piled on the pan. If you're just doing a head of broccoli, you can get away with 25 - 30 minutes. Now the key step is the last one. Once you take them out, drizzle them with fresh squeezed lemon juice. So good. No joke. Don't think we will make veggies any other way. They come out nice and crispy and oh so tasty.
