I apologize for the less than attractive photos this post will bring you. Eric decided he wanted to use the BIGGEST dish we have but we did not have enough potatoes to cover the top of the shepherds pie due to this. Regardless of how it looks, it tasted spectacular.
We had a bunch of leftover potato insides from making potato skins over the weekend so we decided to try our hand at making shepherds pie. I found a plant based shepherds pie recipe on LettuceChance.com that we greatly adapted since we already had our "mashed potatoes." Here is our recipe.
Shepherds Pie
Ingredients:
mashed potatoes
coconut oil
1 yellow onion
3 garlic cloves
4 medium carrots
1 cup peas
1 cup corn
1 cup lentils (soak while preparing other ingredients)
1 1/3 cups vegetable broth
2 tsp. thyme
1 tsp. basil
1 tsp. parsley
1 tsp. oregano
salt
pepper
spelt flour

Preheat oven to 400F and oil casserole dish. Boil potatoes for mashed potatoes and prepare veggie filling. Sauté chopped onion in coconut oil for 5 minutes. Add in chopped carrots and cook for 6 more minutes. Add the remaining veggies (corn, peas, drained lentils) and garlic. In a bowl, mix veggie broth and spelt flour (1 tbsp. at a time until mixture starts to thicken). Add this mixture to veggies and mix. Cook for another 10 minutes or until thickened. Season with salt and pepper. Finish your mashed potatoes and season with a dash or two of thyme. Put veggie mixture on the bottom of the casserole dish and then spread the mashed potatoes on top. Bake for at least 40 minutes or until golden and all ingredients are softened.
So there it is. As you can see, we did not have enough mashed potatoes to cover the top. Eric did not care, and he has continued to eat it as lunch leftovers this week, without adequate amounts of mashed potatoes. It's really good and I strongly recommend this recipe. The ladies over at LettuceChange actually have a tasty looking gravy to go on top. We opted out of the gravy because we didn't feel like making anymore of a mess. As you can see below, you will make a mess with this recipe, but it's totally worth it in the end.
