better than Campbell's tomato soup

Being sick is no fun, but this tasty homemade tomato soup can really help. I've been sick for about 4 days now with not much motivation to do anything, so I am going to try to catch up on blog posts. The other day Eric made me homemade tomato soup; like farm fresh, no gross additives soup or out of a can soup, and it was really simple. 

So here's what he did, with a little help from me.

Ingredients:
2 cups vegetable stock
4 - 5 chopped large tomatoes
chopped onion
1 or 2 cloves minced garlic
1 cup almond milk
handful of roughly chopped basil
salt & pepper to taste

First he took the chopped onion and sauteed it in the bottom of the pot with some coconut oil. Once they onions were softened a bit he added the garlic and stirred it up for a minute or two. Then everything else was added to the pot and brought to a boil. Once it boiled he lowered the heat to let it simmer for a while to make sure the tomatoes cooked up. We then pulled the pot from the heat and used our immersion blender to mix everything up into a puree. Once it was mixed up we put it back on the stove to heat it up a little longer and make sure everything was all mixed up.

Eric also bought some fresh bread which went wonderfully with the tomato soup. Everything was so good. Who needs Campbell's? Not I.
