oh she glows - big vegan bowl

This week Eric and I made the Big Vegan Bowl from Oh She Glows. It's a pretty intense meal and delicious. I love Oh She Glows and all the recipes we have tried from there.
 
If you are looking for a nutrient packed meal that has everything you could possibly need you MUST try this bowl.
 
Here's our take on the Big Vegan Bowl.

Ingredients:
1 sweet potato
1 can chickpeas
1 cup uncooked quinoa
2 carrots
shredded purple cabbage
spinach
kale
hummus
avocado
hemp seeds
lemon juice
 
Preheat over to 400F. Spread chopped sweet potato on one sheet, drizzled with oil and sea salt. Drain and rinse chickpeas, drizzle with oil, sea salt, and spices (paprika). Spread chickpeas on another cooking sheet. Roast for 15 minutes then flip sweet potatoes or chickpeas and put back in the oven for 15 more minutes. Cook quinoa. Assemble the bowl with spinach and kale on the bottom as a base. Sprinkle greens with lime juice. Allow chickpeas and sweet potatoes to cool for 5 minutes before adding to the bowl. Add sweet potatoes, chickpeas, carrots, quinoa, cabbage, and avocado on top of the greens. Put hummus and hemp seeds on top. Enjoy.
 

 
Unfortunately our avocados were still hard and we weren't able to add them into our bowl. I'm sure they would have made the dish even better.
