quinoa vegan burgers

Eric and I have tried a few different veggie burger recipes along with the store bought ones. The quinoa burgers we made for dinner last night are by far my favorite so far. I found them on the Produce on Parade blog.
 
Here is the recipe:

Quinoa Burgers
 
Ingredients:
1 tbsp ground flax seed
2 tbsp water
1 cup cooked quinoa
1 cup old fashioned oats
1 can chickpeas, rinsed & drained
1/2 yellow onion
1/2 cup peas
1/2 cup fresh cilantro
3 garlic cloves
1 tbsp red curry paste
1 tbsp soy sauce
1 tbsp agave nectar
1 tbsp fresh ginger
1 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
spinach (for topping)
BBQ sauce (for topping)
avocado (for topping)
 
Directions:
Whisk together flax and water; set aside to rest for 10 minutes while you prepare
everything else. Cook quinoa until tender. Pulse oats in food processor until they
are ground. Add remaining ingredients including flax mixture until well combined.
Preheat oven to 350F and coat baking sheet with non-stick spray. Heat large frying
pan with oil. Make patties and fry in pan for 1 - 2 minutes on each side until
browned. Should make 5 - 6 patties. Once browned, place on baking sheet. Cook in
oven for 15 - 20 minutes until crispy. Assemble and put whatever you want on top!
 



We had avocado to use up so we put that on top of our burgers with spinach and BBQ sauce. These were damn good burgers!
 
As you can see below, I had a BBQ-splosion of sorts and Eric had a blowout because he decided to smash the bun down. Regardless, delicious burger. We will definitely be making these again.
