quick veggie pizzas

These are a favorite of ours. They are quick and easy so we can throw them together when we are cramped for time. If you have read my meal plan post you know that we made pizzas on Sunday. Eric had a late afternoon softball game so we wanted something that wasn't going to be a spectacle.

Currently we don't make the pizza dough, which is why it is so quick and easy. I would like to try to make pizza dough some time, just haven't had the chance yet.

So this is what we do:

Ingredients:
some sort of flat bread
broccoli
mild peppers
green pepper
marinara sauce
red onion
any other veggie you may want to add

I bought a thin ciabatta like bread and we cut it in half both length-wise and width-wise.

Preheat oven to 400 degrees. Toast the bread (pizza crust) in the oven for a little bit. Once a little toasted, spread on marinara sauce and top with veggie toppings of your choosing. Put them back in the oven for approx 20 minutes so that the veggies can cook.
